Homemade Delicious Roasted Creamy Butter Chicken
You are going to learn how easy it is to make this delicious dish. What is butter chicken? The butter chicken is a delicious creamy dish, originating in the Indian subcontinent. Also known as ‘Murgh Makhani.’ Butter chicken is one of the most popular dishes at any Indian restaurant around the world.
The butter chicken recipe is very similar to the Chicken Tikka Masala Recipe.
Aromatic golden chicken pieces cooked in an incredible creamy curry sauce! Can be served with basmati/long grain rice or naan bread. It is not hard to make. Just follow the instructions and you will end up with an amazing dish. 

INGREDIENTS FOR STEP 1 – MARINATION: 

Things you will need to marinade the chicken: 
  • Chicken With/Without Bones 800g (or you can just use the chicken breast cut into cubes, quartered chicken) whichever ones are easier for you.
  • Olive oil 1 tbsp
  • Garlic & Ginger Paste 1 tbsp
  • Natural Greek Style Yoghurt – ½ cup
  • Red Chilli Powder 1 tsp
  • Coriander Powder 1 tsp
  • Turmeric Powder 1 tsp
  • Paprika Powder 1 tsp 
  • Cumin Powder 1 tsp
  • Garam Masala 1 tsp
  • Salt 1 tsp
  • Fresh Lemon Juice 1 tbsp

INGREDIENTS FOR STEP 2 – SAUCE: 

Things you will need to make the sauce: 
  • Tomato Soup – 400g 
  • Fresh Garlic & Ginger finely chopped  – 1 tbsp each 
  • Cooking Oil/Ghee – ½ cup
  • Butter 50g
  • Red Chilli Powder ½ tsp
  • Coriander Powder ½ tsp
  • Turmeric Powder ½ tsp
  • Paprika Powder ½ tsp
  • Cumin Powder ½ tsp
  • Mixed Herbs ½ tsp (optional)
  • Lemon/Lime 1 tbsp
  • Salt 1 tsp

INGREDIENTS FOR THE FINAL STEP – DRESSINGS: 

  • Butter 100g
  • Freshly Chopped Coriander or Parsley

DIRECTIONS OF COOKING:

STEP 1 – MARINADE THE CHICKEN FIRST: 

Cut the chicken in cubes/square or bite size. Wash the chicken thoroughly. Put the chicken in a bowl and add the following ingredients – Olive oil 1 tbsp, garlic & ginger paste 1 tbsp, natural greek style yoghurt ½ cup, red chilli powder 1 tsp, coriander powder 1 tsp, turmeric powder 1 tsp, paprika powder 1 tsp, cumin powder 1 tsp, garam masala 1 tsp, salt 1 tsp and fresh lemon juice 1 tbsp. Mix it well and seal it with the cling film and leave it in the fridge for about 15 minutes. 

STEP 2 – PREPARE THE SAUCE: 

Now let’s make the sauce. Preferably in a non stick medium size cooking pot. Place the pot on the cooker and turn on the gas mark to 5 for about 3 minutes. 
Keep it on gas mark 5 and then add the following ingredients – ½ a cup of oil/ghee and 50g of butter, 400g of tomato soup, fresh garlic & ginger finely chopped 1 tbsp each, red chilli powder ½ tsp, coriander powder ½ tsp, turmeric powder ½ tsp, paprika powder ½ tsp, cumin powder ½ tsp, mixed herbs ½ tsp and fresh lemon/lime juice 1 tbsp. 
Mix them all and cook it for 5 minutes on gas mark 5 then down to 2. Put the lid on and let it simmer for further 10 minutes.
When adding all the ingredients, it doesn’t have to be in any particular order. Just put everything in and mix it all gently.

STEP 3: TIME TO PUT THE CHICKEN IN THE OVEN: 25 MINUTES

Preheat the oven at 220 degrees for 10 minutes. While the oven is getting hot, you will need an oven tray, brush the tray with a bit of olive oil/ghee. Now take the marinated chicken out from the fridge and place the chicken in that tray and spread it out evenly.
Once the oven is ready, put the tray in the oven at 220 degrees and set the timer on for 20 minutes. Take the tray out after 20 minutes, flip the chickens and leave it for another 5 minutes.
Turn the oven off, take the tray out and carefully (the tray will be hot!) empty the tray (including all the juice) in the sauce that you have prepared earlier on.
Mix it gently and let it simmer for 10 minutes and you are all done! Time to eat. What would you like to have it with? If you have decided to have it with rice then it will take only about 10 – 15 minutes to cook rice.

FINAL STEP – DRESSINGS: 

Just prior to serving, add 100g butter and some freshly chopped coriander to your dish to make it look and taste delicious.

SERVING SUGGESTIONS: 

The butter chicken is best served with plain basmati/long grain Rice, but you can also serve with Pasta, freshly made Naan or ready made ones.
In short, you can serve it with almost anything you like and still taste amazingly buttery delicious!!!

On a side note: If you are in a rush you can skip the MARINATION and the OVEN part as long as you double the suggested ingredients for the sauce and it will still taste delicious.
